I recently had the opportunity to go back to my hometown (Montreal, Canada) to photograph some dishes prepared by Michele Mercuri, the executive chef at XO Le Restaurant, at the Hotel Le St-James, for Food Arts.

I loved the experience, these chefs treat plating like it's sculpture!
